A dip can easily make a usual meal a little different for the day. It’s something yummy to have while you snack on raw vegetables or even accompanying a meal with steamed vegetables. It is quick to make and useful when you have an excess of something. In this case, I had lots of cilantro that was going to mush soon.
Ingredients:
1 cup Plain Greek yogurt
1 garlic clove
Handful of cilantro
Salt + pepper to taste
Splash of cayenne (However much you deem suitable to your spicy radar)
2 teaspoons of olive oil
1/2 a lime
1 teaspoon of ground cumin
Steps:
Put the Greek yogurt in a deep bowl
Cut up all the cilantro small as possible, with or without the stems (depends on your preference)
Add the cilantro to the yogurt along with the cumin, olive oil, cayenne, salt, and pepper
Squeeze half a lime into the bowl
Dice a clove of garlic and very lightly cook it in a pan with some olive oil. I take if off the heat as soon as it starts browning
While the garlic is cooking mix everything together in the bowl
Once the garlic is ready, add it into the bowl, and mix everything again
Try it out to see if you’d like to add a bit more of any ingredient. I had to add a bit more of cayenne to get the spiciness I wanted.
Serve as a side with some raw vegetables, add on top of some steamed broccoli, or mix with some chicken! Whatever you choose to pair this dip with I hope you enjoy it and know that it's always possible to add any other herbs + spices you want!
